Is it possible to substitute sugar with Stevia? I’m afraid the froth won’t turn out if I do. Have you tried? Thanks.

I have made this in the past, however the amount of caffeine involved might kill me, and it was very bitter. I hand whisk and I go with a 1/2:1:1 ratio of coffee:water:sugar. It came together and frothed far more quickly than I expected. But I also hand whisk whipping cream and egg whites, so perhaps I am just weird.
