This was perfect! The radishes came out nice, as well as the glass noodles. The broth had a wonderful flavor, and the beef was tender. I used fish sauce instead of Korean soy sauce. I also used a Vidalia onion (gave a hint more sweetness). MAKE SURE that you salt this properly. People are scared of adding salt, but I think I may have used 4 or 5 big pinches of Hawaiian Pink Sea Salt to get this balanced nicely.
